Ingredients

  • 8 oz ramen noodles
  • 4 cups chicken or vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp bonito flakes or dashi powder
  • 2 green onions, chopped
  • 1 tsp salt

Directions

  1. 1Heat broth in a saucepan over medium heat and add minced garlic and grated ginger, simmer for 5 minutes.
  2. 2Stir in soy sauce, mirin, bonito flakes, and salt, then simmer for 10 minutes to develop flavor.
  3. 3Pour the broth through a fine strainer into a bowl to create the dipping sauce, discarding solids.
  4. 4Bring a large pot of water to a boil and cook ramen noodles according to package directions, then drain and rinse with cold water.
  5. 5Transfer noodles to serving plates and drizzle lightly with sesame oil.
  6. 6Pour the warm dipping broth into small bowls and garnish with green onions.
  7. 7Serve noodles alongside the dipping sauce for dunking before eating.
