Tteok Kkochi (Korean Rice Cake Skewers)

Chewy rice cakes threaded on skewers, pan-blistered and painted with a sweet gochujang glaze.

Ingredients

  • 400 g tteok
  • 2 tbsp gochujang
  • 1 tbsp ketchup
  • 1 tbsp honey
  • 1 tsp sesame oil

Directions

  1. 1Soak the tteok in hot water for five minutes until pliable, then drain them well.
  2. 2Thread four or five onto each skewer, pushed close together.
  3. 3Heat a little oil in a wide pan and lay the skewers down.
  4. 4Cook five minutes, turning, until blistered and browned in patches.
  5. 5Mix the gochujang, ketchup, honey and sesame oil into a glaze.
  6. 6Brush it over the skewers and cook two minutes more until it darkens and clings.

💡 Glaze at the end. Sugar and gochujang burn fast, and a skewer glazed from the start is black before the tteok has blistered.
