Tunisian Fricassé (Tuna and Potato Sandwich)

Tunisian fried bread rolls filled with tuna, potato, egg, olives, harissa, and preserved lemon for a compact savoury lunch.

Ingredients

  • 3 cups all-purpose flour
  • 2 tsp instant yeast
  • 1 1/4 cups warm water
  • 1 tsp salt
  • 1 tsp granulated sugar
  • 4 cups vegetable oil for frying
  • 2 cans (5 oz each) canned tuna, drained
  • 2 medium potatoes, peeled and diced
  • 3 eggs
  • 1/3 cup harissa
  • 1/2 cup green olives, sliced
  • 2 tbsp preserved lemon, finely chopped

Directions

  1. 1Mix flour, yeast, sugar, salt, and warm water into a soft dough and knead for 6 minutes.
  2. 2Cover the dough and let it rise for 45 minutes.
  3. 3Boil potatoes for 10 minutes and eggs for 9 minutes, then cool and slice both.
  4. 4Shape the dough into small oval rolls and fry at 350°F (175°C) until golden.
  5. 5Split each fried roll and spread with harissa.
  6. 6Fill with tuna, potato, egg, olives, and preserved lemon and serve.

💡 Fry the dough rolls until evenly golden but not dark; over-fried bread becomes too rigid to split and fill cleanly.
