Tunisian Fricassé (Tuna and Potato Sandwich)
Tunisian fried bread rolls filled with tuna, potato, egg, olives, harissa, and preserved lemon for a compact savoury lunch.

Ingredients
- •3 cups all-purpose flour
- •2 tsp instant yeast
- •1 1/4 cups warm water
- •1 tsp salt
- •1 tsp granulated sugar
- •4 cups vegetable oil for frying
- •2 cans (5 oz each) canned tuna, drained
- •2 medium potatoes, peeled and diced
- •3 eggs
- •1/3 cup harissa
- •1/2 cup green olives, sliced
- •2 tbsp preserved lemon, finely chopped
Directions
- 1Mix flour, yeast, sugar, salt, and warm water into a soft dough and knead for 6 minutes.
- 2Cover the dough and let it rise for 45 minutes.
- 3Boil potatoes for 10 minutes and eggs for 9 minutes, then cool and slice both.
- 4Shape the dough into small oval rolls and fry at 350°F (175°C) until golden.
- 5Split each fried roll and spread with harissa.
- 6Fill with tuna, potato, egg, olives, and preserved lemon and serve.
💡 Fry the dough rolls until evenly golden but not dark; over-fried bread becomes too rigid to split and fill cleanly.
