Ingredients

  • •2 lbs ground turkey
  • •1 cup breadcrumbs
  • •1 medium onion, finely diced
  • •1 cup grated zucchini
  • •1 cup grated carrots
  • •2 eggs
  • •1/2 cup milk
  • •1/2 cup ketchup
  • •2 tbsp apple cider vinegar
  • •1 tsp salt
  • •1/2 tsp black pepper

Directions

  1. 1Preheat oven to 350°F and line a loaf pan with foil or lightly grease it.
  2. 2In a large bowl, combine ground turkey, breadcrumbs, onion, zucchini, carrots, eggs, milk, salt, and pepper until just mixed.
  3. 3Press the mixture evenly into the prepared loaf pan.
  4. 4In a small bowl, whisk together ketchup and apple cider vinegar, then spread over the top of the meatloaf.
  5. 5Bake for 45-50 minutes until the internal temperature reaches 165°F.
  6. 6Let rest for 5 minutes before slicing and serving.

💡 Turkey meatloaf with vegetables needs excess zucchini moisture squeezed out; watery vegetables can make the loaf soft enough to crumble.
