Turkey and Vegetable Stir-Fry

A quick and healthy dinner with tender turkey and colorful vegetables in a savory soy-ginger sauce.

Ingredients

  • 1.5 lbs turkey breast, sliced thin
  • 2 tablespoons vegetable oil
  • 1 medium bell pepper, sliced
  • 2 cups broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch

Directions

  1. 1Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Cook the turkey slices until golden and cooked through, about 5-6 minutes. Remove and set aside.
  2. 2Add remaining oil to the wok and stir-fry the broccoli and bell pepper for 3-4 minutes until slightly tender-crisp.
  3. 3Add garlic, ginger, and snap peas, cooking for another 2 minutes until fragrant.
  4. 4Mix soy sauce, sesame oil, and cornstarch with 2 tablespoons water in a small bowl.
  5. 5Return the turkey to the wok, pour in the sauce, and toss everything together for 1-2 minutes until the sauce thickens and coats the ingredients.
  6. 6Serve immediately over steamed rice or noodles.
