Turkish Lamb with Yogurt (Yogurtlu Kuzu)

Tender roasted lamb served over crispy bread and topped with savory yogurt sauce and spiced tomato butter.

Ingredients

  • 1.5 lbs lamb shoulder, cubed
  • 2 cups plain yogurt
  • 4 cloves garlic, minced
  • 3 tbsp butter
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp paprika
  • 1 tsp cumin
  • to taste salt and pepper
  • 2 tbsp olive oil
  • 4 slices pita or flatbread

Directions

  1. 1Season lamb with salt, pepper, and cumin. Heat olive oil in a large pot over medium-high heat and brown the lamb on all sides, about 8 minutes.
  2. 2Add 1 cup water to the pot, reduce heat to medium-low, cover, and simmer for 45 minutes until lamb is tender.
  3. 3In a separate pan, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  4. 4Stir in crushed tomatoes and paprika, simmer for 10 minutes. Season with salt and pepper.
  5. 5In a bowl, whisk yogurt with salt and 2 minced garlic cloves until smooth.
  6. 6Toast or warm the pita bread, then arrange on a serving platter.
  7. 7Spread yogurt sauce over the bread, top with the cooked lamb and its cooking liquid, then drizzle the spiced tomato butter sauce over the top.
  8. 8Serve immediately, garnished with fresh parsley if desired.
