Turkish Split Pea Soup (Mercimek Çorbası)

Ingredients
- •2 cups yellow split peas, rinsed
- •1 large onion, diced
- •2 tablespoons olive oil
- •6 cups vegetable or chicken broth
- •1 carrot, peeled and diced
- •1 teaspoon cumin
- •1 teaspoon salt
- •½ teaspoon black pepper
- •2 tablespoons fresh mint, chopped
- •1 tablespoon lemon juice
Directions
- 1Heat olive oil in a large pot over medium heat and sauté diced onion until golden and slightly caramelized, about 8 minutes.
- 2Add diced carrot and cumin, cooking for 2 minutes until fragrant.
- 3Pour in the rinsed split peas and broth, bringing to a boil.
- 4Reduce heat and simmer for 25-30 minutes until peas are completely soft and broken down.
- 5Blend the soup until smooth using an immersion blender or carefully transfer to a blender in batches.
- 6Return soup to pot if needed, season with salt and pepper, and stir in lemon juice.
- 7Serve hot, garnished with fresh mint and a drizzle of olive oil.
