Turkish Split Pea Soup (Mercimek Çorbası)

A velvety, warming split pea soup with caramelized onions and a hint of mint that's beloved throughout Turkey.

Ingredients

  • 2 cups yellow split peas, rinsed
  • 1 large onion, diced
  • 2 tablespoons olive oil
  • 6 cups vegetable or chicken broth
  • 1 carrot, peeled and diced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon lemon juice

Directions

  1. 1Heat olive oil in a large pot over medium heat and sauté diced onion until golden and slightly caramelized, about 8 minutes.
  2. 2Add diced carrot and cumin, cooking for 2 minutes until fragrant.
  3. 3Pour in the rinsed split peas and broth, bringing to a boil.
  4. 4Reduce heat and simmer for 25-30 minutes until peas are completely soft and broken down.
  5. 5Blend the soup until smooth using an immersion blender or carefully transfer to a blender in batches.
  6. 6Return soup to pot if needed, season with salt and pepper, and stir in lemon juice.
  7. 7Serve hot, garnished with fresh mint and a drizzle of olive oil.
