Filipino banana-and-jackfruit spring rolls rolled in brown sugar and fried until the wrapper turns crisp and caramelized.

Ingredients

  • 6 saba bananas, peeled and halved lengthwise
  • 1/2 cup ripe jackfruit, cut into strips
  • 1/2 cup brown sugar
  • 12 spring roll wrappers
  • 2 tbsp water
  • 3 cups neutral frying oil

Directions

  1. 1Roll each banana half in brown sugar, then place it with a few jackfruit strips near one corner of a spring roll wrapper.
  2. 2Fold the side corners inward, roll tightly, and brush the final corner with water to seal.
  3. 3Heat frying oil to 350°F (175°C) in a deep pot.
  4. 4Fry 4 banana-filled spring rolls at a time for 3–4 minutes, turning once, until deeply golden and crisp.
  5. 5Drain on a rack and cool 5 minutes before serving because the caramelized sugar stays very hot.

💡 Saba bananas are firmer and starchier than standard dessert bananas; if substituting, use barely ripe bananas so the filling does not collapse in the oil.
