Ingredients
- •6 saba bananas, peeled and halved lengthwise
- •1/2 cup ripe jackfruit, cut into strips
- •1/2 cup brown sugar
- •12 spring roll wrappers
- •2 tbsp water
- •3 cups neutral frying oil
Directions
- 1Roll each banana half in brown sugar, then place it with a few jackfruit strips near one corner of a spring roll wrapper.
- 2Fold the side corners inward, roll tightly, and brush the final corner with water to seal.
- 3Heat frying oil to 350°F (175°C) in a deep pot.
- 4Fry 4 banana-filled spring rolls at a time for 3–4 minutes, turning once, until deeply golden and crisp.
- 5Drain on a rack and cool 5 minutes before serving because the caramelized sugar stays very hot.
💡 Saba bananas are firmer and starchier than standard dessert bananas; if substituting, use barely ripe bananas so the filling does not collapse in the oil.
