Ingredients

  • •2 cups Greek yogurt
  • •1 medium cucumber, grated and drained
  • •4 cloves garlic, minced
  • •2 tablespoons fresh dill, chopped
  • •1 tablespoon fresh lemon juice
  • •1 tablespoon olive oil
  • •1/2 teaspoon salt
  • •1/4 teaspoon black pepper

Directions

  1. 1Grate the cucumber and squeeze out excess moisture using a paper towel or clean cloth.
  2. 2In a bowl, combine Greek yogurt, minced garlic, chopped dill, lemon juice, and olive oil.
  3. 3Stir in the drained cucumber and mix well until combined.
  4. 4Season with salt and black pepper to taste.
  5. 5Refrigerate for at least 10 minutes before serving to allow flavors to meld.
  6. 6Stir before serving and drizzle with a little olive oil if desired.

💡 Grated cucumber must be squeezed very dry for tzatziki; otherwise the yogurt thins noticeably within minutes.
