Đậu Hũ Sốt Cà Chua (Vietnamese Tofu in Tomato Sauce)
Fried tofu cubes simmered in a light tomato sauce until they drink it up, a Vietnamese home staple.

Ingredients
- •450 g extra firm tofu, cut into cubes
- •400 g canned tomatoes
- •2 green onions, sliced
- •1 tbsp soy sauce
- •2 tbsp neutral oil
Directions
- 1Press the tofu between paper towels for ten minutes, then cut it into large cubes.
- 2Fry the cubes in the oil for six minutes, turning, until golden on several sides. Lift them out.
- 3Add the tomatoes to the same pan with a splash of water and season.
- 4Simmer ten minutes until the sauce thickens and loses its raw edge.
- 5Return the tofu, add the soy sauce, and simmer five minutes so it takes up the sauce.
- 6Scatter the green onions over and serve with rice.
💡 Fry the tofu first and set it aside. Simmering raw tofu in the sauce leaves it bland and it breaks up as you stir.
