Ugali with Sukuma Wiki

A hearty East African staple of creamy cornmeal served alongside sautéed collard greens with tomatoes and onions.

Ingredients

  • 2 cups water
  • 1 cup cornmeal
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound collard greens, chopped
  • 2 medium tomatoes, diced
  • 1/2 teaspoon black pepper

Directions

  1. 1Bring 2 cups of water to a boil in a pot and add 1 teaspoon of salt.
  2. 2Slowly stir in the cornmeal while whisking continuously to avoid lumps, then reduce heat to low.
  3. 3Cook for 10-12 minutes, stirring frequently, until the mixture is thick and pulls away from the sides of the pot.
  4. 4While the ugali cooks, heat oil in a separate pan and sauté onion and garlic until fragrant.
  5. 5Add chopped collard greens and cook for 5 minutes, stirring occasionally.
  6. 6Add diced tomatoes, black pepper, and salt to taste, then simmer for 5 more minutes.
  7. 7Transfer the ugali to a plate and shape into a mound, then serve with the sukuma wiki on the side.
