Ingredients

  • 4 slices rustic bread
  • 4 oz sliced ham
  • 4 oz Gouda cheese, sliced
  • 4 eggs
  • 2 tbsp unsalted butter
  • 1 tbsp fresh chives, chopped
  • 1/4 tsp black pepper

Directions

  1. 1Toast the bread until crisp at the edges but still sturdy enough to hold the toppings.
  2. 2Lay ham and Gouda over each toast while the bread is still warm.
  3. 3Melt butter in a skillet over medium heat and crack in the eggs.
  4. 4Fry the eggs until the whites are set and the yolks remain runny, about 3 minutes.
  5. 5Place one fried egg on each ham-and-Gouda toast and season with black pepper.
  6. 6Scatter with chives and serve open-faced with a knife and fork.

💡 Keep the yolks soft enough to run over the ham and Gouda when cut; that is the point of the open-faced format.
