Uitsmijter (Dutch Ham and Egg Toast)

Ingredients
- •4 slices rustic bread
- •4 oz sliced ham
- •4 oz Gouda cheese, sliced
- •4 eggs
- •2 tbsp unsalted butter
- •1 tbsp fresh chives, chopped
- •1/4 tsp black pepper
Directions
- 1Toast the bread until crisp at the edges but still sturdy enough to hold the toppings.
- 2Lay ham and Gouda over each toast while the bread is still warm.
- 3Melt butter in a skillet over medium heat and crack in the eggs.
- 4Fry the eggs until the whites are set and the yolks remain runny, about 3 minutes.
- 5Place one fried egg on each ham-and-Gouda toast and season with black pepper.
- 6Scatter with chives and serve open-faced with a knife and fork.
💡 Keep the yolks soft enough to run over the ham and Gouda when cut; that is the point of the open-faced format.
