Ukrainian Pirozhki with Cabbage
Soft baked Ukrainian buns filled with tender cabbage, onion, carrot, and dill, made in individual portions that travel well.

Ingredients
- •3 1/2 cups all-purpose flour
- •2 1/4 tsp instant yeast
- •1 tbsp granulated sugar
- •1 1/2 tsp salt
- •1 1/4 cups warm water
- •1/4 cup vegetable oil
- •4 cups green cabbage, finely shredded
- •1 medium yellow onion, finely diced
- •1 medium carrot, coarsely grated
- •2 tbsp fresh dill, chopped
- •1/2 tsp black pepper
Directions
- 1Mix flour, yeast, sugar, and half the salt, then knead with warm water and 2 tablespoons oil until smooth.
- 2Cover the dough and let it rise 50 minutes until noticeably puffed.
- 3Cook cabbage, onion, and carrot in remaining oil for 10 minutes; season with remaining salt, pepper, and dill, then cool.
- 4Divide the dough into twelve pieces and flatten each into a 4-inch round.
- 5Spoon cabbage filling into each round, pinch the edges closed, and place seam-side down on a lined baking sheet.
- 6Bake at 375°F (190°C) for 22–25 minutes until the pirozhki are evenly golden.
💡 Cool the cabbage filling before shaping; warm filling softens the dough and makes the seams difficult to seal.
