Ulster Fry

A hearty full Irish breakfast featuring crispy bacon, sausages, eggs, and tomatoes served alongside soda bread.

Ingredients

  • 4 rashers back bacon
  • 4 pork sausages
  • 2 eggs
  • 1 tomato, halved
  • 4 slices soda bread
  • 2 tbsp butter
  • 2 tbsp vegetable oil
  • to taste Salt and pepper

Directions

  1. 1Heat oil in a large frying pan over medium-high heat and cook the sausages for 12-15 minutes, turning occasionally, until golden brown and cooked through.
  2. 2Add the bacon rashers to the pan and fry for 3-4 minutes on each side until crispy.
  3. 3Push the sausages and bacon to the side, add the tomato halves cut-side down, and fry for 3-4 minutes until softened.
  4. 4Create space in the pan, crack the eggs into it, and fry until the whites are set but yolks remain runny, about 3 minutes.
  5. 5Toast the soda bread slices in a separate pan with butter until golden brown on both sides.
  6. 6Arrange all components on a warm plate and season with salt and pepper before serving.
