Ultimate Bacon Cheeseburger

Ingredients
- •680 g (1.5 lb) 80/20 ground beef
- •8 strips thick-cut bacon
- •4 slices sharp cheddar cheese slices
- •4 brioche or sesame burger buns
- •1 large yellow onion, thinly sliced
- •1 tbsp unsalted butter
- •1 tbsp Worcestershire sauce
- •½ tsp garlic powder
- •1 tsp kosher salt
- •½ tsp black pepper
- •4 iceberg lettuce leaves
- •1 large tomato, sliced
- •to taste ketchup and mustard
Directions
- 1Cook bacon in a skillet over medium heat until crispy; transfer to paper towels and reserve 1 tbsp drippings in the pan.
- 2Add butter and sliced onions to the pan; cook over medium-low heat for 15 minutes, stirring occasionally, until deep golden and caramelized.
- 3Divide beef into 4 equal portions; gently form into patties about 2 cm thick, making a small dimple in the center of each.
- 4Season patties generously on both sides with salt, pepper, and garlic powder; brush with Worcestershire sauce.
- 5Grill or pan-sear patties over medium-high heat for 4 minutes per side for medium doneness (71°C internal).
- 6Lay a cheddar slice on each patty in the last minute of cooking; cover to melt.
- 7Toast buns on the grill or in a dry skillet for 1 minute until golden.
- 8Build burgers: bottom bun, condiments, lettuce, tomato, patty with cheese, caramelized onions, 2 strips bacon, top bun.
💡 Making the dimple prevents patties from puffing up into a dome as they cook. For extra-crispy bacon, bake strips on a rack at 200°C for 18 minutes instead of pan-frying.
