Upma

A savory South Indian semolina porridge studded with vegetables and tempered with aromatic spices.

Ingredients

  • 1 cup semolina (rava)
  • 2 tablespoons ghee
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 dried red chilies
  • 1 cup mixed vegetables (carrots, peas, beans)
  • 1 small onion, diced
  • 1 tablespoon fresh ginger, minced
  • 3 cups water
  • 1 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped
  • 2 green chilies, sliced

Directions

  1. 1Dry roast the semolina in a pan on medium heat for 2-3 minutes until golden, stirring constantly. Set aside.
  2. 2Heat ghee in a large pan and add mustard seeds, cumin seeds, and dried red chilies. Let them crackle for 30 seconds.
  3. 3Add diced onions and ginger, sauté until onions turn translucent, about 2 minutes.
  4. 4Add mixed vegetables and green chilies, cook for 2 minutes until slightly softened.
  5. 5Pour in the water and bring to a boil. Once boiling, slowly add roasted semolina while stirring continuously to avoid lumps.
  6. 6Reduce heat to medium-low and stir frequently until the semolina absorbs the water and becomes creamy, about 5-7 minutes.
  7. 7Season with salt, garnish with fresh cilantro, and serve hot with lemon wedges or pickle.
