⏱ 20 minServes 4Indian
Ingredients
- •1 cup semolina (rava)
- •2 tablespoons ghee
- •1 teaspoon mustard seeds
- •1 teaspoon cumin seeds
- •2 dried red chilies
- •1 cup mixed vegetables (carrots, peas, beans)
- •1 small onion, diced
- •1 tablespoon fresh ginger, minced
- •3 cups water
- •1 teaspoon salt
- •2 tablespoons fresh cilantro, chopped
- •2 green chilies, sliced
Directions
- 1Dry roast the semolina in a pan on medium heat for 2-3 minutes until golden, stirring constantly. Set aside.
- 2Heat ghee in a large pan and add mustard seeds, cumin seeds, and dried red chilies. Let them crackle for 30 seconds.
- 3Add diced onions and ginger, sauté until onions turn translucent, about 2 minutes.
- 4Add mixed vegetables and green chilies, cook for 2 minutes until slightly softened.
- 5Pour in the water and bring to a boil. Once boiling, slowly add roasted semolina while stirring continuously to avoid lumps.
- 6Reduce heat to medium-low and stir frequently until the semolina absorbs the water and becomes creamy, about 5-7 minutes.
- 7Season with salt, garnish with fresh cilantro, and serve hot with lemon wedges or pickle.
