Urad Dal
A creamy and aromatic Indian lentil curry with tempering spices that melts in your mouth.

Ingredients
- •1 cup white urad dal (split and skinned)
- •3 cups water
- •1/2 teaspoon turmeric powder
- •2 tablespoons ghee or oil
- •1 teaspoon cumin seeds
- •2-3 dried red chilies
- •1 inch ginger, minced
- •3-4 cloves garlic, minced
- •1 medium onion, finely chopped
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •2 tablespoons fresh cilantro, chopped
Directions
- 1Rinse the urad dal thoroughly under cold water until water runs clear.
- 2Cook the dal in 3 cups of water with turmeric powder on high heat for 15-20 minutes until soft and creamy, stirring occasionally and removing foam that rises.
- 3Heat ghee in a separate pan and add cumin seeds and dried red chilies, let them splutter for 30 seconds.
- 4Add minced ginger and garlic, sauté for 1 minute until fragrant.
- 5Add chopped onions and cook until golden brown, about 3-4 minutes.
- 6Pour this tempering mixture into the cooked dal and stir well to combine.
- 7Season with salt and black pepper, simmer for 3-5 minutes to blend flavors.
- 8Garnish with fresh cilantro and serve hot with rice or bread.
