Urad Dal

Ingredients

  • 1 cup white urad dal (split and skinned)
  • 3 cups water
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • 2-3 dried red chilies
  • 1 inch ginger, minced
  • 3-4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Directions

  1. 1Rinse the urad dal thoroughly under cold water until water runs clear.
  2. 2Cook the dal in 3 cups of water with turmeric powder on high heat for 15-20 minutes until soft and creamy, stirring occasionally and removing foam that rises.
  3. 3Heat ghee in a separate pan and add cumin seeds and dried red chilies, let them splutter for 30 seconds.
  4. 4Add minced ginger and garlic, sauté for 1 minute until fragrant.
  5. 5Add chopped onions and cook until golden brown, about 3-4 minutes.
  6. 6Pour this tempering mixture into the cooked dal and stir well to combine.
  7. 7Season with salt and black pepper, simmer for 3-5 minutes to blend flavors.
  8. 8Garnish with fresh cilantro and serve hot with rice or bread.
