Uttapam
A savory South Indian pancake topped with crispy vegetables and spices, served piping hot with chutney.

Ingredients
- •1 cup rice flour
- •1/2 cup urad dal flour
- •1/4 cup water
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •1 medium onion, finely chopped
- •1 green chili, minced
- •1/2 cup tomato, diced
- •2 tablespoons coriander leaves, chopped
- •2 tablespoons coconut oil
Directions
- 1Mix rice flour and urad dal flour with water to form a thick, pourable batter. Season with salt and black pepper.
- 2Heat a non-stick griddle or skillet over medium-high heat and lightly grease with coconut oil.
- 3Pour one ladle of batter onto the griddle and spread gently into a circular shape about 6 inches in diameter.
- 4Top the batter with chopped onions, green chili, tomato pieces, and coriander leaves while it's still wet.
- 5Drizzle a little coconut oil around the edges and cook for 3-4 minutes until the bottom is golden brown.
- 6Flip carefully and cook the other side for 2-3 minutes until crispy and light brown.
- 7Transfer to a plate and repeat with remaining batter and toppings.
- 8Serve hot with coconut chutney or tomato chutney.
