Vada Curry
Crispy lentil fritters simmered in a rich, spiced tomato-based curry sauce.

Ingredients
- •1 cup urad dal (split white lentils)
- •1/4 cup chana dal
- •1 teaspoon cumin seeds
- •2-3 green chilies, chopped
- •1/4 cup fresh coriander, chopped
- •2 cups tomato puree
- •1 tablespoon ginger-garlic paste
- •2 teaspoons red chili powder
- •1 teaspoon turmeric powder
- •1 cup coconut milk
- •2 tablespoons oil
- •1 teaspoon salt
Directions
- 1Soak urad dal and chana dal for 4 hours, then grind into a thick batter without adding water; mix in cumin seeds, green chilies, coriander, and salt.
- 2Heat oil in a pan and deep-fry spoonfuls of batter until golden brown vadas are formed; drain on paper towels.
- 3In the same pan, heat oil and add ginger-garlic paste, sauté for 1 minute until fragrant.
- 4Add tomato puree, red chili powder, and turmeric powder; cook for 5 minutes on medium heat.
- 5Pour in coconut milk and bring to a simmer, then gently add the fried vadas.
- 6Simmer for 10-12 minutes until vadas are well-coated and the curry thickens slightly, stirring occasionally.
- 7Serve hot with rice or roti.
