Vada Curry

Crispy lentil fritters simmered in a rich, spiced tomato-based curry sauce.

Ingredients

  • 1 cup urad dal (split white lentils)
  • 1/4 cup chana dal
  • 1 teaspoon cumin seeds
  • 2-3 green chilies, chopped
  • 1/4 cup fresh coriander, chopped
  • 2 cups tomato puree
  • 1 tablespoon ginger-garlic paste
  • 2 teaspoons red chili powder
  • 1 teaspoon turmeric powder
  • 1 cup coconut milk
  • 2 tablespoons oil
  • 1 teaspoon salt

Directions

  1. 1Soak urad dal and chana dal for 4 hours, then grind into a thick batter without adding water; mix in cumin seeds, green chilies, coriander, and salt.
  2. 2Heat oil in a pan and deep-fry spoonfuls of batter until golden brown vadas are formed; drain on paper towels.
  3. 3In the same pan, heat oil and add ginger-garlic paste, sauté for 1 minute until fragrant.
  4. 4Add tomato puree, red chili powder, and turmeric powder; cook for 5 minutes on medium heat.
  5. 5Pour in coconut milk and bring to a simmer, then gently add the fried vadas.
  6. 6Simmer for 10-12 minutes until vadas are well-coated and the curry thickens slightly, stirring occasionally.
  7. 7Serve hot with rice or roti.
