Vanilla Custard Tart

A classic French dessert with a crisp pastry shell filled with silky vanilla custard and topped with a light dusting of nutmeg.

Ingredients

  • 1 pre-made pie crust or 8 oz store-bought pastry
  • 2 cups whole milk
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • 5 egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon butter
  • pinch salt
  • 1/4 teaspoon ground nutmeg

Directions

  1. 1Preheat oven to 400°F. Line a 9-inch tart pan with pastry, prick the bottom with a fork, and bake for 10-12 minutes until light golden. Remove and let cool slightly.
  2. 2Heat milk with vanilla bean or extract in a saucepan until it just begins to steam; do not boil.
  3. 3Whisk together egg yolks, sugar, cornstarch, and salt until pale and thick, then slowly pour in the hot milk while whisking constantly to temper the eggs.
  4. 4Pour the mixture back into the saucepan and cook over medium heat, stirring constantly for 3-4 minutes until it thickens into a custard.
  5. 5Remove from heat, stir in butter until melted, then strain through a fine sieve into the cooled tart shell.
  6. 6Smooth the top with a spatula and dust lightly with nutmeg.
  7. 7Refrigerate for at least 2 hours until the custard is set and chilled before serving.
