Vanilla Ice Cream

Ingredients
- •2 cups heavy cream
- •1 cup whole milk
- •3/4 cup granulated sugar
- •5 egg yolks
- •2 teaspoons vanilla extract
- •1/4 teaspoon salt
Directions
- 1Heat 1 cup of heavy cream and milk in a saucepan over medium heat until steaming, but do not boil.
- 2Whisk egg yolks with sugar until pale and thick, about 2 minutes.
- 3Slowly add the hot cream mixture to the egg mixture while whisking constantly to temper the eggs.
- 4Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it reaches 160°F or coats the back of a spoon (about 3-5 minutes).
- 5Strain the custard through a fine mesh sieve into a bowl, then stir in vanilla extract and salt.
- 6Chill the custard in the refrigerator for at least 2 hours.
- 7Pour into an ice cream maker and churn according to manufacturer's instructions, about 20-25 minutes.
- 8Transfer to a freezer-safe container and freeze for at least 4 hours before serving.
