Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 5 egg yolks
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt

Directions

  1. 1Heat 1 cup of heavy cream and milk in a saucepan over medium heat until steaming, but do not boil.
  2. 2Whisk egg yolks with sugar until pale and thick, about 2 minutes.
  3. 3Slowly add the hot cream mixture to the egg mixture while whisking constantly to temper the eggs.
  4. 4Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it reaches 160°F or coats the back of a spoon (about 3-5 minutes).
  5. 5Strain the custard through a fine mesh sieve into a bowl, then stir in vanilla extract and salt.
  6. 6Chill the custard in the refrigerator for at least 2 hours.
  7. 7Pour into an ice cream maker and churn according to manufacturer's instructions, about 20-25 minutes.
  8. 8Transfer to a freezer-safe container and freeze for at least 4 hours before serving.
