Vegetable Fried Rice with Egg
A quick and savory stir-fried rice dish loaded with colorful vegetables and scrambled eggs.

Ingredients
- •3 cups cooked rice, cooled
- •3 eggs, beaten
- •1 cup frozen mixed vegetables
- •1/2 cup diced onion
- •1/2 cup diced carrots
- •3 cloves garlic, minced
- •3 tablespoons soy sauce
- •2 tablespoons vegetable oil
- •1 teaspoon sesame oil
- •1/4 teaspoon white pepper
- •2 green onions, chopped
Directions
- 1Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.
- 2Pour in the beaten eggs and scramble until fully cooked, then remove and set aside.
- 3Add remaining oil to the skillet and stir-fry the onion, carrots, and garlic for 2 minutes.
- 4Add the frozen mixed vegetables and cook for another 2 minutes.
- 5Add the cooled rice, breaking up any clumps, and stir-fry for 3-4 minutes.
- 6Return the eggs to the skillet, add soy sauce, sesame oil, and white pepper, and toss everything together for 1 minute.
- 7Garnish with green onions and serve hot.
