Ingredients

  • 8 large eggs
  • 1/4 cup whole milk
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach
  • 1/2 cup cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Heat olive oil in a 10-inch oven-safe skillet over medium heat. Sauté onion, bell pepper, and mushrooms for 5 minutes until softened. Add spinach and cook until wilted.
  3. 3In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
  4. 4Pour egg mixture over the vegetables in the skillet, stirring gently to distribute evenly. Cook on stovetop for 2-3 minutes until edges begin to set.
  5. 5Sprinkle cheese over the top and transfer skillet to the oven.
  6. 6Bake for 12-15 minutes until the center is set and the top is lightly golden.
  7. 7Let cool for 2 minutes, slice into wedges, and serve warm.
