Vegetable Frittata

Ingredients
- •8 large eggs
- •1/4 cup whole milk
- •2 tablespoons olive oil
- •1 medium onion, diced
- •1 red bell pepper, diced
- •1 cup mushrooms, sliced
- •2 cups fresh spinach
- •1/2 cup cheddar cheese, shredded
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
Directions
- 1Preheat oven to 375°F (190°C).
- 2Heat olive oil in a 10-inch oven-safe skillet over medium heat. Sauté onion, bell pepper, and mushrooms for 5 minutes until softened. Add spinach and cook until wilted.
- 3In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
- 4Pour egg mixture over the vegetables in the skillet, stirring gently to distribute evenly. Cook on stovetop for 2-3 minutes until edges begin to set.
- 5Sprinkle cheese over the top and transfer skillet to the oven.
- 6Bake for 12-15 minutes until the center is set and the top is lightly golden.
- 7Let cool for 2 minutes, slice into wedges, and serve warm.
