Vegetarian Chili

Ingredients
- •2 tablespoons olive oil
- •1 large onion, diced
- •3 cloves garlic, minced
- •2 cans (15 oz each) kidney beans, drained and rinsed
- •1 can (15 oz) black beans, drained and rinsed
- •1 can (28 oz) crushed tomatoes
- •1 can (6 oz) tomato paste
- •2 tablespoons chili powder
- •1 tablespoon cumin
- •1 teaspoon salt
- •1/2 teaspoon black pepper
Directions
- 1Heat olive oil in a large pot over medium heat. Sauté diced onion for 5 minutes until softened, then add minced garlic and cook for 1 minute.
- 2Stir in chili powder and cumin, cooking for 30 seconds until fragrant.
- 3Add kidney beans, black beans, crushed tomatoes, and tomato paste to the pot. Stir well to combine.
- 4Bring to a simmer, then reduce heat to low. Season with salt and pepper.
- 5Simmer uncovered for 25-30 minutes, stirring occasionally, until the flavors meld and the chili thickens.
