Vegetarian Chili

A hearty, warming bowl of beans and vegetables simmered in a rich, spiced tomato sauce.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. 1Heat olive oil in a large pot over medium heat. Sauté diced onion for 5 minutes until softened, then add minced garlic and cook for 1 minute.
  2. 2Stir in chili powder and cumin, cooking for 30 seconds until fragrant.
  3. 3Add kidney beans, black beans, crushed tomatoes, and tomato paste to the pot. Stir well to combine.
  4. 4Bring to a simmer, then reduce heat to low. Season with salt and pepper.
  5. 5Simmer uncovered for 25-30 minutes, stirring occasionally, until the flavors meld and the chili thickens.
