Veggie Supreme Pizza

Veggie Supreme Pizza

A loaded, colourful pizza piled high with roasted peppers, mushrooms, olives, and red onion on a saucy, cheesy base. It's the vegetable lover's answer to pizza night and just as satisfying as any meat pie.

⏱ 35 minServes 4American

Ingredients

  • 1 store-bought pizza dough ball (450 g)
  • ⅓ cup pizza sauce
  • 1½ cups shredded mozzarella
  • ½ green bell pepper, thinly sliced
  • ½ red bell pepper, thinly sliced
  • 1 cup cremini mushrooms, sliced
  • ¼ red onion, thinly sliced
  • ¼ cup black olives, sliced
  • ½ cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • ½ tsp dried oregano
  • ¼ tsp red chili flakes (optional)

Directions

  1. 1Place a baking sheet or pizza stone in the oven and preheat to 230 °C (450 °F) for at least 15 minutes.
  2. 2Toss mushrooms, bell peppers, and red onion in olive oil and spread on a second baking sheet; roast for 8 minutes until slightly softened, then remove.
  3. 3On a lightly floured surface, stretch or roll the dough into a 30 cm (12-inch) round.
  4. 4Transfer dough to a piece of parchment paper, then spread pizza sauce evenly, leaving a 2 cm border.
  5. 5Scatter mozzarella over the sauce, then top with roasted vegetables, olives, and cherry tomatoes.
  6. 6Sprinkle oregano and chili flakes over the top.
  7. 7Slide the pizza (on parchment) onto the hot baking sheet or stone and bake 12–14 minutes until the crust is golden and cheese is bubbling.

💡 Pre-roasting the vegetables prevents a soggy crust. Any store-brand pizza dough from the deli or refrigerated section works well; Pillsbury Classic Pizza Crust in a can is a great pantry backup.
