Veggie Supreme Pizza
A loaded, colourful pizza piled high with roasted peppers, mushrooms, olives, and red onion on a saucy, cheesy base. It's the vegetable lover's answer to pizza night and just as satisfying as any meat pie.

Ingredients
- •1 store-bought pizza dough ball (450 g)
- •⅓ cup pizza sauce
- •1½ cups shredded mozzarella
- •½ green bell pepper, thinly sliced
- •½ red bell pepper, thinly sliced
- •1 cup cremini mushrooms, sliced
- •¼ red onion, thinly sliced
- •¼ cup black olives, sliced
- •½ cup cherry tomatoes, halved
- •1 tbsp olive oil
- •½ tsp dried oregano
- •¼ tsp red chili flakes (optional)
Directions
- 1Place a baking sheet or pizza stone in the oven and preheat to 230 °C (450 °F) for at least 15 minutes.
- 2Toss mushrooms, bell peppers, and red onion in olive oil and spread on a second baking sheet; roast for 8 minutes until slightly softened, then remove.
- 3On a lightly floured surface, stretch or roll the dough into a 30 cm (12-inch) round.
- 4Transfer dough to a piece of parchment paper, then spread pizza sauce evenly, leaving a 2 cm border.
- 5Scatter mozzarella over the sauce, then top with roasted vegetables, olives, and cherry tomatoes.
- 6Sprinkle oregano and chili flakes over the top.
- 7Slide the pizza (on parchment) onto the hot baking sheet or stone and bake 12–14 minutes until the crust is golden and cheese is bubbling.
💡 Pre-roasting the vegetables prevents a soggy crust. Any store-brand pizza dough from the deli or refrigerated section works well; Pillsbury Classic Pizza Crust in a can is a great pantry backup.
