Vetkoek with Curried Mince

South African fried bread stuffed with a warmly spiced ground-beef curry for a hearty portable lunch.

Ingredients

  • 4 cups all-purpose flour
  • 2 tsp instant yeast
  • 1 tbsp granulated sugar
  • 1 1/2 tsp salt
  • 1 1/2 cups warm water
  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 1 1/2 tbsp curry powder
  • 1 tomato, diced
  • 1 cup frozen peas
  • 5 cups vegetable oil for frying

Directions

  1. 1Mix flour, yeast, sugar, half the salt, and warm water into a soft dough.
  2. 2Knead for 7 minutes, cover, and rise for 45 minutes.
  3. 3Cook ground beef and onion for 6 minutes, then add curry powder, tomato, peas, and remaining salt.
  4. 4Simmer the mince for 8 minutes and keep warm.
  5. 5Shape the risen dough into six rounds and fry at 350°F (175°C) until puffed and golden.
  6. 6Split the vetkoek and fill generously with curried mince.
