Vetkoek with Curried Mince
South African fried bread stuffed with a warmly spiced ground-beef curry for a hearty portable lunch.

Ingredients
- •4 cups all-purpose flour
- •2 tsp instant yeast
- •1 tbsp granulated sugar
- •1 1/2 tsp salt
- •1 1/2 cups warm water
- •1 lb ground beef
- •1 medium yellow onion, diced
- •1 1/2 tbsp curry powder
- •1 tomato, diced
- •1 cup frozen peas
- •5 cups vegetable oil for frying
Directions
- 1Mix flour, yeast, sugar, half the salt, and warm water into a soft dough.
- 2Knead for 7 minutes, cover, and rise for 45 minutes.
- 3Cook ground beef and onion for 6 minutes, then add curry powder, tomato, peas, and remaining salt.
- 4Simmer the mince for 8 minutes and keep warm.
- 5Shape the risen dough into six rounds and fry at 350°F (175°C) until puffed and golden.
- 6Split the vetkoek and fill generously with curried mince.
