Vietnamese Beef Pho
Aromatic beef broth infused with star anise and cinnamon, served over tender rice noodles and thinly sliced beef.

Ingredients
- •2 lbs beef chuck or brisket
- •8 cups beef broth
- •1 onion, halved
- •2 inch piece fresh ginger, sliced
- •2 star anise pods
- •1 cinnamon stick
- •2 tablespoons fish sauce
- •1 tablespoon sugar
- •8 oz dried rice noodles
- •2 cups fresh bean sprouts
- •1 bunch fresh basil and cilantro
- •2 limes, cut into wedges
Directions
- 1Char the onion and ginger under a broiler for 3-4 minutes until fragrant, then add to a large pot with beef broth.
- 2Add beef chuck, star anise, and cinnamon stick to the broth and bring to boil, then simmer for 1.5 hours until beef is tender.
- 3Remove beef and let cool, then slice thinly. Strain broth and return to pot, seasoning with fish sauce and sugar.
- 4Cook rice noodles according to package directions, then drain and divide into serving bowls.
- 5Ladle hot broth over noodles and top with sliced beef, bean sprouts, herbs, and lime wedges for serving.
