Vietnamese Beef Pho

Ingredients

  • 2 lbs beef chuck or brisket
  • 8 cups beef broth
  • 1 onion, halved
  • 2 inch piece fresh ginger, sliced
  • 2 star anise pods
  • 1 cinnamon stick
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 8 oz dried rice noodles
  • 2 cups fresh bean sprouts
  • 1 bunch fresh basil and cilantro
  • 2 limes, cut into wedges

Directions

  1. 1Char the onion and ginger under a broiler for 3-4 minutes until fragrant, then add to a large pot with beef broth.
  2. 2Add beef chuck, star anise, and cinnamon stick to the broth and bring to boil, then simmer for 1.5 hours until beef is tender.
  3. 3Remove beef and let cool, then slice thinly. Strain broth and return to pot, seasoning with fish sauce and sugar.
  4. 4Cook rice noodles according to package directions, then drain and divide into serving bowls.
  5. 5Ladle hot broth over noodles and top with sliced beef, bean sprouts, herbs, and lime wedges for serving.
