Vietnamese Chicken Salad (Goi Ga)

Ingredients
- •1 lb boneless, skinless chicken breast
- •3 cups shredded green cabbage
- •2 large carrots, julienned
- •1 cup fresh mint leaves, chopped
- •1 cup fresh cilantro, chopped
- •3 tablespoons fresh lime juice
- •2 tablespoons fish sauce
- •2 cloves garlic, minced
- •1 tablespoon sugar
- •1/2 cup roasted peanuts, crushed
Directions
- 1Boil chicken breast in salted water for 12-15 minutes until cooked through. Cool and shred into bite-sized pieces.
- 2In a small bowl, whisk together lime juice, fish sauce, minced garlic, and sugar to make the dressing.
- 3Combine shredded cabbage, carrots, mint, and cilantro in a large bowl.
- 4Add the shredded chicken to the vegetables and pour the dressing over top.
