Ingredients

  • 1 lb boneless, skinless chicken breast
  • 3 cups shredded green cabbage
  • 2 large carrots, julienned
  • 1 cup fresh mint leaves, chopped
  • 1 cup fresh cilantro, chopped
  • 3 tablespoons fresh lime juice
  • 2 tablespoons fish sauce
  • 2 cloves garlic, minced
  • 1 tablespoon sugar
  • 1/2 cup roasted peanuts, crushed

Directions

  1. 1Boil chicken breast in salted water for 12-15 minutes until cooked through. Cool and shred into bite-sized pieces.
  2. 2In a small bowl, whisk together lime juice, fish sauce, minced garlic, and sugar to make the dressing.
  3. 3Combine shredded cabbage, carrots, mint, and cilantro in a large bowl.
  4. 4Add the shredded chicken to the vegetables and pour the dressing over top.
  5. 5Toss everything together until well combined and flavors are distributed.
  6. 6Transfer to serving plates and garnish with crushed roasted peanuts before serving.
