Vietnamese Spring Rolls

Ingredients
- •12 rice paper wrappers
- •1 pound large shrimp, cooked and halved lengthwise
- •8 ounces rice vermicelli noodles
- •1 cup lettuce, shredded
- •1/2 cup fresh mint leaves
- •1/2 cup fresh cilantro leaves
- •1/2 cup carrots, julienned
- •1/3 cup peanut butter
- •2 tablespoons fish sauce
- •1 tablespoon lime juice
- •1 tablespoon sugar
- •1/4 cup warm water
Directions
- 1Cook rice vermicelli according to package directions, then drain and cool.
- 2Whisk together peanut butter, fish sauce, lime juice, sugar, and warm water to make the dipping sauce.
- 3Fill a shallow bowl with warm water and dip each rice paper wrapper for 2-3 seconds until softened, then lay flat on a clean surface.
- 4Layer each wrapper with lettuce, noodles, shrimp halves (pink side down for presentation), carrots, mint, and cilantro.
- 5Fold in the sides of each wrapper, then roll tightly from bottom to top, creating a cylinder shape.
- 6Serve immediately with the peanut dipping sauce on the side.
