Vietnamese Spring Rolls

Ingredients

  • 12 rice paper wrappers
  • 1 pound large shrimp, cooked and halved lengthwise
  • 8 ounces rice vermicelli noodles
  • 1 cup lettuce, shredded
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup carrots, julienned
  • 1/3 cup peanut butter
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sugar
  • 1/4 cup warm water

Directions

  1. 1Cook rice vermicelli according to package directions, then drain and cool.
  2. 2Whisk together peanut butter, fish sauce, lime juice, sugar, and warm water to make the dipping sauce.
  3. 3Fill a shallow bowl with warm water and dip each rice paper wrapper for 2-3 seconds until softened, then lay flat on a clean surface.
  4. 4Layer each wrapper with lettuce, noodles, shrimp halves (pink side down for presentation), carrots, mint, and cilantro.
  5. 5Fold in the sides of each wrapper, then roll tightly from bottom to top, creating a cylinder shape.
  6. 6Serve immediately with the peanut dipping sauce on the side.
