Wara (Nigerian Fresh Cheese Snack)

Milk curdled with lemon, pressed into soft white cheese and fried golden, eaten with pepper and salt.

Ingredients

  • 1 litre whole milk
  • 60 ml lemon juice
  • 1/2 tsp salt
  • 500 ml neutral oil, for frying

Directions

  1. 1Heat the milk to just below boiling, stirring so it does not catch on the base.
  2. 2Take it off the heat, stir in the lemon juice, and stand ten minutes until the curds separate cleanly.
  3. 3Pour through a cloth-lined sieve and drain fifteen minutes.
  4. 4Gather the cloth, twist it tight, and press the curd into a firm block.
  5. 5Cut into thick cubes and salt them.
  6. 6Fry at 170C for three minutes until golden on all sides, then drain.

💡 If the whey stays milky rather than turning clear and yellow, the milk was not hot enough. Reheat it and add a little more lemon.
