Wara (Nigerian Fresh Cheese Snack)
Milk curdled with lemon, pressed into soft white cheese and fried golden, eaten with pepper and salt.

Ingredients
- •1 litre whole milk
- •60 ml lemon juice
- •1/2 tsp salt
- •500 ml neutral oil, for frying
Directions
- 1Heat the milk to just below boiling, stirring so it does not catch on the base.
- 2Take it off the heat, stir in the lemon juice, and stand ten minutes until the curds separate cleanly.
- 3Pour through a cloth-lined sieve and drain fifteen minutes.
- 4Gather the cloth, twist it tight, and press the curd into a firm block.
- 5Cut into thick cubes and salt them.
- 6Fry at 170C for three minutes until golden on all sides, then drain.
💡 If the whey stays milky rather than turning clear and yellow, the milk was not hot enough. Reheat it and add a little more lemon.
