Ingredients

  • 8 oz fresh spinach
  • 6 slices bacon
  • 1/2 cup red onion, thinly sliced
  • 3 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • to taste salt and pepper

Directions

  1. 1Cook bacon in a large skillet over medium heat until crispy, about 8 minutes. Remove and chop into bite-sized pieces.
  2. 2In the same skillet, sauté the sliced red onion and mushrooms in the bacon fat for 3 minutes until softened.
  3. 3Add minced garlic and cook for 1 minute until fragrant.
  4. 4Whisk together red wine vinegar, olive oil, and Dijon mustard in a small bowl, then pour into the skillet.
  5. 5Add the fresh spinach to the warm vinaigrette and toss gently for 1-2 minutes until just wilted.
  6. 6Stir in the chopped bacon, season with salt and pepper, and serve immediately while warm.
