Warm Spinach and Bacon Salad

Ingredients
- •8 oz fresh spinach
- •6 slices bacon
- •1/2 cup red onion, thinly sliced
- •3 oz mushrooms, sliced
- •2 cloves garlic, minced
- •1/4 cup red wine vinegar
- •3 tablespoons olive oil
- •1 teaspoon Dijon mustard
- •to taste salt and pepper
Directions
- 1Cook bacon in a large skillet over medium heat until crispy, about 8 minutes. Remove and chop into bite-sized pieces.
- 2In the same skillet, sauté the sliced red onion and mushrooms in the bacon fat for 3 minutes until softened.
- 3Add minced garlic and cook for 1 minute until fragrant.
- 4Whisk together red wine vinegar, olive oil, and Dijon mustard in a small bowl, then pour into the skillet.
- 5Add the fresh spinach to the warm vinaigrette and toss gently for 1-2 minutes until just wilted.
- 6Stir in the chopped bacon, season with salt and pepper, and serve immediately while warm.
