Welsh Rarebit
A thick savoury cheese paste loosened with beer and mustard, spread on toast and blistered under the grill.

Ingredients
- •8 slices bread
- •250 g cheddar cheese, grated
- •120 ml lager beer
- •1 tbsp Dijon mustard
- •1 tsp Worcestershire sauce
Directions
- 1Warm the beer in a small pan and add the grated cheddar a handful at a time over low heat.
- 2Stir five minutes until it melts into a thick, smooth paste that pulls away from the pan.
- 3Beat in the mustard and Worcestershire sauce and let it cool slightly so it thickens further.
- 4Toast the bread on both sides.
- 5Spread the cheese paste right to the edges of each slice, leaving no bare crust.
- 6Grill three minutes until blistered and browned in patches, and eat straight away.
💡 Cover the crust completely. Any exposed edge burns under the grill before the cheese has coloured.
