Ingredients

  • 8 slices bread
  • 250 g cheddar cheese, grated
  • 120 ml lager beer
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce

Directions

  1. 1Warm the beer in a small pan and add the grated cheddar a handful at a time over low heat.
  2. 2Stir five minutes until it melts into a thick, smooth paste that pulls away from the pan.
  3. 3Beat in the mustard and Worcestershire sauce and let it cool slightly so it thickens further.
  4. 4Toast the bread on both sides.
  5. 5Spread the cheese paste right to the edges of each slice, leaving no bare crust.
  6. 6Grill three minutes until blistered and browned in patches, and eat straight away.

💡 Cover the crust completely. Any exposed edge burns under the grill before the cheese has coloured.
