West African Okra Soup

Ingredients
- •2 tablespoons vegetable oil
- •1 medium onion, chopped
- •1 pound beef or fish, cubed
- •3 medium tomatoes, diced
- •2 tablespoons tomato paste
- •1 pound okra, trimmed and sliced
- •4 cups beef or vegetable broth
- •2 cloves garlic, minced
- •1 teaspoon salt
- •½ teaspoon black pepper
- •2 tablespoons ground peanut butter
Directions
- 1Heat oil in a large pot and sauté onion and garlic until fragrant, about 2 minutes.
- 2Add meat and brown on all sides, approximately 5-7 minutes.
- 3Stir in tomato paste and cook for 1 minute, then add diced tomatoes and simmer for 5 minutes.
- 4Pour in broth and bring to a boil, then reduce heat and simmer for 10 minutes.
- 5Add sliced okra and peanut butter, stirring well to combine.
- 6Season with salt and pepper, then simmer for 15-20 minutes until okra is tender and soup thickens.
- 7Taste and adjust seasonings as needed before serving hot.
