West African Okra Soup

Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 1 pound beef or fish, cubed
  • 3 medium tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 pound okra, trimmed and sliced
  • 4 cups beef or vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons ground peanut butter

Directions

  1. 1Heat oil in a large pot and sauté onion and garlic until fragrant, about 2 minutes.
  2. 2Add meat and brown on all sides, approximately 5-7 minutes.
  3. 3Stir in tomato paste and cook for 1 minute, then add diced tomatoes and simmer for 5 minutes.
  4. 4Pour in broth and bring to a boil, then reduce heat and simmer for 10 minutes.
  5. 5Add sliced okra and peanut butter, stirring well to combine.
  6. 6Season with salt and pepper, then simmer for 15-20 minutes until okra is tender and soup thickens.
  7. 7Taste and adjust seasonings as needed before serving hot.
