West African Palm Soup
A rich and savory tomato-based stew with tender meat, vegetables, and aromatic palm oil that's traditionally served with fufu or rice.

Ingredients
- •3 tablespoons palm oil
- •1.5 pounds beef or lamb, cubed
- •1 large onion, chopped
- •3 cloves garlic, minced
- •2 cups canned diced tomatoes
- •2 tablespoons tomato paste
- •4 cups beef broth
- •2 medium carrots, diced
- •1 pound spinach or kale, chopped
- •2 teaspoons ground cayenne pepper
- •1 teaspoon salt
- •½ teaspoon black pepper
Directions
- 1Heat palm oil in a large pot over medium-high heat and brown the cubed meat on all sides, about 8 minutes.
- 2Add chopped onion and garlic, sauté until fragrant, approximately 3 minutes.
- 3Stir in tomato paste and cook for 2 minutes, then add diced tomatoes and beef broth.
- 4Bring to a boil, then reduce heat and simmer for 40 minutes until meat is tender.
- 5Add diced carrots and simmer for 10 more minutes.
- 6Stir in chopped spinach or kale and cook until wilted, about 5 minutes.
- 7Season with cayenne pepper, salt, and black pepper to taste and serve hot with fufu or rice.
