West African Peanut Stew

Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 pound chicken or beef, cubed
  • 4 cups chicken or vegetable broth
  • 1 cup natural peanut butter
  • 2 medium sweet potatoes, cubed
  • 2 cups spinach or kale, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground ginger
  • ½ teaspoon cayenne pepper
  • 1 teaspoon salt

Directions

  1. 1Heat oil in a large pot over medium-high heat and sauté onion and garlic until fragrant, about 2 minutes.
  2. 2Add meat and brown on all sides, approximately 5-7 minutes.
  3. 3Pour in broth and bring to a boil, then add sweet potatoes and reduce heat to simmer for 15 minutes.
  4. 4Stir in peanut butter, tomatoes, ginger, cayenne, and salt, mixing until the peanut butter is fully incorporated.
  5. 5Simmer for 10 minutes until sweet potatoes are tender.
  6. 6Add greens and cook for an additional 3-5 minutes until wilted.
  7. 7Taste and adjust seasonings as needed, then serve hot.
