West African Peanut Stew
A rich and warming stew combining tender vegetables and protein in a creamy peanut butter sauce with aromatic spices.

Ingredients
- •2 tablespoons vegetable oil
- •1 large onion, diced
- •3 cloves garlic, minced
- •1 pound chicken or beef, cubed
- •4 cups chicken or vegetable broth
- •1 cup natural peanut butter
- •2 medium sweet potatoes, cubed
- •2 cups spinach or kale, chopped
- •1 can (14 oz) diced tomatoes
- •1 teaspoon ground ginger
- •½ teaspoon cayenne pepper
- •1 teaspoon salt
Directions
- 1Heat oil in a large pot over medium-high heat and sauté onion and garlic until fragrant, about 2 minutes.
- 2Add meat and brown on all sides, approximately 5-7 minutes.
- 3Pour in broth and bring to a boil, then add sweet potatoes and reduce heat to simmer for 15 minutes.
- 4Stir in peanut butter, tomatoes, ginger, cayenne, and salt, mixing until the peanut butter is fully incorporated.
- 5Simmer for 10 minutes until sweet potatoes are tender.
- 6Add greens and cook for an additional 3-5 minutes until wilted.
- 7Taste and adjust seasonings as needed, then serve hot.
