White Bean Soup

Ingredients
- •2 tablespoons olive oil
- •1 medium onion, diced
- •2 cloves garlic, minced
- •2 medium carrots, diced
- •2 celery stalks celery, diced
- •4 cups vegetable or chicken broth
- •2 cans (15 oz each) white beans, drained and rinsed
- •1 teaspoon dried Italian herbs
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •1 cup fresh spinach
Directions
- 1Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3 minutes.
- 2Stir in minced garlic, carrots, and celery. Cook for 5 minutes until vegetables begin to soften.
- 3Pour in broth and add white beans, Italian herbs, salt, and pepper. Bring to a simmer.
- 4Reduce heat and simmer for 15 minutes to allow flavors to blend.
- 5Stir in fresh spinach and cook for 2-3 minutes until wilted.
- 6Taste and adjust seasonings as needed. Serve hot and enjoy.
