White Bean Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks celery, diced
  • 4 cups vegetable or chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach

Directions

  1. 1Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3 minutes.
  2. 2Stir in minced garlic, carrots, and celery. Cook for 5 minutes until vegetables begin to soften.
  3. 3Pour in broth and add white beans, Italian herbs, salt, and pepper. Bring to a simmer.
  4. 4Reduce heat and simmer for 15 minutes to allow flavors to blend.
  5. 5Stir in fresh spinach and cook for 2-3 minutes until wilted.
  6. 6Taste and adjust seasonings as needed. Serve hot and enjoy.
