Ingredients

  • 1 lb white fish, cut into bite-sized chunks
  • 6 eggs
  • 2 cups spinach, roughly chopped
  • 1/4 cup heavy cream
  • 1/2 cup parmesan, grated
  • 2 tbsp butter
  • 1/2 tsp red chili flakes

Directions

  1. 1Preheat oven to 375°F.
  2. 2Melt butter in an oven-safe skillet over medium heat.
  3. 3Season fish with salt and pepper; cook 3 minutes until just opaque, then set aside.
  4. 4Sauté spinach in same skillet until wilted, about 2 minutes.
  5. 5Whisk eggs with heavy cream, parmesan, salt, and red chili flakes.
  6. 6Return fish to skillet, pour egg mixture over, cook 2 minutes on stovetop.
  7. 7Transfer skillet to oven and bake 15 minutes until set and golden.
