White Garlic Pizza
A rich, no-tomato pizza built on a creamy roasted-garlic base with ricotta, mozzarella, and spinach — elegant enough for date night but easy enough for any weeknight.

Ingredients
- •500 g store-bought pizza dough
- •0.75 cup ricotta cheese
- •1.5 cups shredded mozzarella cheese
- •3 garlic cloves, minced
- •3 tbsp olive oil
- •2 cups baby spinach
- •0.25 cup Parmesan cheese, grated
- •0.5 tsp salt
- •0.25 tsp black pepper
- •0.5 tsp dried thyme
- •0.5 tsp lemon zest
Directions
- 1Preheat oven to 475°F (245°C) with a pizza stone or inverted baking sheet inside.
- 2Warm 2 tbsp olive oil in a small skillet over medium heat; cook garlic 1–2 minutes until fragrant but not browned.
- 3Stir ricotta with the garlic-oil mixture, salt, pepper, thyme, and lemon zest until smooth.
- 4Quickly wilt spinach in the same skillet with remaining olive oil for 1–2 minutes; drain any liquid.
- 5Stretch dough to a 12-inch round on parchment and spread ricotta mixture evenly to the edges.
- 6Scatter mozzarella over ricotta, distribute wilted spinach on top, and finish with Parmesan.
- 7Bake 11–14 minutes until crust is golden and cheese is lightly blistered.
- 8Cool 2 minutes before slicing.
💡 Add sliced fresh mushrooms or artichoke hearts from a jar for extra flavour. Fontina cheese is a wonderful substitute for half the mozzarella if you can find it at a specialty grocer.
