  • 1 3/4 cups whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 1/2 cups fresh blueberries

Directions

  1. 1Preheat oven to 400°F and line a muffin tin with paper liners.
  2. 2In a large bowl, whisk together whole wheat flour, all-purpose flour, sugar, baking powder, and salt.
  3. 3In another bowl, whisk milk, oil, and egg until combined.
  4. 4Pour wet ingredients into dry ingredients and stir until just combined; fold in blueberries gently.
  5. 5Divide batter evenly among muffin cups, filling each about two-thirds full.
  6. 6Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.
  7. 7Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
