Whole Steamed Fish with Ginger and Scallions
A classic Chinese preparation where a whole fish is steamed until tender and topped with aromatic ginger, scallions, and a savory soy-based sauce.

Ingredients
- •1 whole sea bass or branzino (1.5-2 lbs), cleaned and scaled
- •3 tablespoons soy sauce
- •1 tablespoon sesame oil
- •1 tablespoon rice vinegar
- •2 teaspoons sugar
- •3 inches fresh ginger, julienned
- •4 scallions, cut into 2-inch pieces
- •2 cloves garlic, minced
- •1 teaspoon salt
- •½ teaspoon white pepper
Directions
- 1Fill a steamer pot with water and bring to a boil. Pat the fish dry and place on a heatproof plate that fits inside the steamer.
- 2Sprinkle salt and white pepper inside and outside the fish cavity. Top with half the ginger and half the scallions.
- 3Place the plate with the fish in the steamer and cover. Steam for 12-15 minutes, depending on fish size, until the flesh is opaque and flakes easily.
- 4While the fish steams, whisk together soy sauce, sesame oil, rice vinegar, sugar, and minced garlic in a small bowl.
- 5Remove the steamed fish from the steamer and carefully discard the cooking liquid from the plate.
- 6Arrange the remaining fresh ginger and scallions on top of the cooked fish.
- 7Pour the sauce mixture over the fish and serve immediately with steamed rice.
