Ingredients

  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 6 tablespoons cold butter, cubed
  • 3/4 cup buttermilk
  • 1 tablespoon honey
  • 1/4 teaspoon black pepper

Directions

  1. 1Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2Whisk together whole wheat flour, all-purpose flour, baking powder, salt, and black pepper in a large bowl.
  3. 3Cut cold butter into the flour mixture using a pastry cutter or fork until it resembles coarse crumbs.
  4. 4Stir honey into buttermilk, then gently fold into the dry ingredients until just combined; do not overmix.
  5. 5Turn dough onto a lightly floured surface and pat to 3/4-inch thickness, then cut into 12 biscuits using a round cutter.
  6. 6Place biscuits on prepared baking sheet and bake for 12-15 minutes until golden brown.
  7. 7Cool for 2 minutes before serving warm with butter or jam.
