Wiener Schnitzel

Ingredients
- •4 veal cutlets (about 1/4 inch thick)
- •1 cup all-purpose flour
- •2 eggs
- •1 cup breadcrumbs
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •1 cup vegetable oil
- •2 lemons, cut into wedges
Directions
- 1Place veal cutlets between plastic wrap and pound gently with a meat mallet until thin and even.
- 2Set up three shallow bowls with flour mixed with salt and pepper, beaten eggs, and breadcrumbs.
- 3Coat each cutlet in flour, then dip in egg, then coat thoroughly with breadcrumbs, pressing gently.
- 4Heat oil in a large skillet over medium-high heat until shimmering.
- 5Fry schnitzel 2-3 minutes per side until golden brown and cooked through.
- 6Transfer to paper towels to drain excess oil and serve immediately with lemon wedges.
