Wiener Schnitzel

Tender, breaded veal cutlets fried until golden and crispy, served with a squeeze of fresh lemon.

Ingredients

  • 4 veal cutlets (about 1/4 inch thick)
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup vegetable oil
  • 2 lemons, cut into wedges

Directions

  1. 1Place veal cutlets between plastic wrap and pound gently with a meat mallet until thin and even.
  2. 2Set up three shallow bowls with flour mixed with salt and pepper, beaten eggs, and breadcrumbs.
  3. 3Coat each cutlet in flour, then dip in egg, then coat thoroughly with breadcrumbs, pressing gently.
  4. 4Heat oil in a large skillet over medium-high heat until shimmering.
  5. 5Fry schnitzel 2-3 minutes per side until golden brown and cooked through.
  6. 6Transfer to paper towels to drain excess oil and serve immediately with lemon wedges.
