Wilted Spinach Salad

Ingredients
- •8 cups fresh spinach, roughly chopped
- •4 slices bacon, chopped
- •1 medium red onion, thinly sliced
- •4 hard-boiled eggs, sliced
- •1/2 cup mushrooms, sliced
- •3 tablespoons olive oil
- •3 tablespoons red wine vinegar
- •1 teaspoon Dijon mustard
- •1 clove garlic, minced
- •to taste Salt and pepper
Directions
- 1Cook bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Remove and set aside on paper towels, then crumble.
- 2In the same skillet, add sliced mushrooms and onion to the bacon fat. Sauté for 3-4 minutes until softened.
- 3Whisk together olive oil, red wine vinegar, Dijon mustard, and minced garlic in a small bowl. Season with salt and pepper.
- 4Pour the vinaigrette into the skillet with the mushrooms and onions, stirring well.
- 5Add the chopped spinach to the warm vinaigrette and toss continuously for 1-2 minutes until wilted.
- 6Transfer to a serving bowl and top with crumbled bacon and sliced eggs. Serve immediately while warm.
