Ingredients

  • 8 cups fresh spinach, roughly chopped
  • 4 slices bacon, chopped
  • 1 medium red onion, thinly sliced
  • 4 hard-boiled eggs, sliced
  • 1/2 cup mushrooms, sliced
  • 3 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced

Directions

  1. 1Cook bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Remove and set aside on paper towels, then crumble.
  2. 2In the same skillet, add sliced mushrooms and onion to the bacon fat. Sauté for 3-4 minutes until softened.
  3. 3Whisk together olive oil, red wine vinegar, Dijon mustard, and minced garlic in a small bowl. Season with salt and pepper.
  4. 4Pour the vinaigrette into the skillet with the mushrooms and onions, stirring well.
  5. 5Add the chopped spinach to the warm vinaigrette and toss continuously for 1-2 minutes until wilted.
  6. 6Transfer to a serving bowl and top with crumbled bacon and sliced eggs. Serve immediately while warm.
