Ingredients

  • 2 cups glutinous rice
  • 2 links Chinese sausage, thinly sliced
  • 3/4 cup pork floss
  • 1/3 cup dried shrimp, soaked and drained
  • 1/4 cup scallion oil
  • 3 shallots, thinly sliced
  • 2 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1/4 tsp black pepper

Directions

  1. 1Cover the glutinous rice with water and soak for 4 hours, then drain it thoroughly.
  2. 2Steam the soaked rice for 25–30 minutes until tender and glossy.
  3. 3Cook Chinese sausage for 4 minutes, then add dried shrimp and soy sauce and cook 2 minutes more.
  4. 4Fry the shallots in vegetable oil until crisp and golden, then drain them on paper towel.
  5. 5Fluff the sticky rice and fold in half the scallion oil while it is still hot.
  6. 6Top with sausage, dried shrimp, pork floss, crisp shallots, remaining scallion oil, and black pepper.

💡 Soak the glutinous rice fully before steaming; under-soaked grains stay hard in the centre even after the outside turns sticky.
