Xôi Mặn (Vietnamese Savoury Sticky Rice)

Ingredients
- •2 cups glutinous rice
- •2 links Chinese sausage, thinly sliced
- •3/4 cup pork floss
- •1/3 cup dried shrimp, soaked and drained
- •1/4 cup scallion oil
- •3 shallots, thinly sliced
- •2 tbsp vegetable oil
- •1 tbsp soy sauce
- •1/4 tsp black pepper
Directions
- 1Cover the glutinous rice with water and soak for 4 hours, then drain it thoroughly.
- 2Steam the soaked rice for 25–30 minutes until tender and glossy.
- 3Cook Chinese sausage for 4 minutes, then add dried shrimp and soy sauce and cook 2 minutes more.
- 4Fry the shallots in vegetable oil until crisp and golden, then drain them on paper towel.
- 5Fluff the sticky rice and fold in half the scallion oil while it is still hot.
- 6Top with sausage, dried shrimp, pork floss, crisp shallots, remaining scallion oil, and black pepper.
💡 Soak the glutinous rice fully before steaming; under-soaked grains stay hard in the centre even after the outside turns sticky.
