Yaki Udon

Chewy noodles stir-fried with vegetables and protein in a savory soy-based sauce until crispy and caramelized.

Ingredients

  • 10 oz udon noodles
  • 2 tablespoons vegetable oil
  • 3 oz pork belly or chicken, thinly sliced
  • 1 cup cabbage, chopped
  • 1/2 onion, sliced
  • 1 carrot, julienned
  • 3 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green onions, chopped

Directions

  1. 1Cook udon noodles according to package directions, drain, and set aside.
  2. 2Heat vegetable oil in a large skillet or wok over high heat.
  3. 3Stir-fry pork and garlic for 2 minutes until pork begins to brown.
  4. 4Add cabbage, onion, carrot, and ginger; stir-fry for 3 minutes until vegetables soften.
  5. 5Add cooked udon noodles to the skillet and toss to combine.
  6. 6Pour soy sauce and mirin over the noodles and stir constantly for 2-3 minutes until noodles are heated through and caramelized.
  7. 7Drizzle with sesame oil and toss well.
  8. 8Garnish with green onions and serve immediately.
