Yaki Udon

Ingredients
- •10 oz udon noodles
- •2 tablespoons vegetable oil
- •3 oz pork belly or chicken, thinly sliced
- •1 cup cabbage, chopped
- •1/2 onion, sliced
- •1 carrot, julienned
- •3 tablespoons soy sauce
- •1 tablespoon mirin
- •1 teaspoon sesame oil
- •2 cloves garlic, minced
- •1 teaspoon ginger, minced
- •2 green onions, chopped
Directions
- 1Cook udon noodles according to package directions, drain, and set aside.
- 2Heat vegetable oil in a large skillet or wok over high heat.
- 3Stir-fry pork and garlic for 2 minutes until pork begins to brown.
- 4Add cabbage, onion, carrot, and ginger; stir-fry for 3 minutes until vegetables soften.
- 5Add cooked udon noodles to the skillet and toss to combine.
- 6Pour soy sauce and mirin over the noodles and stir constantly for 2-3 minutes until noodles are heated through and caramelized.
- 7Drizzle with sesame oil and toss well.
- 8Garnish with green onions and serve immediately.
