Thai glass-noodle salad with shrimp, herbs, cucumber, tomato, and a lime-fish-sauce dressing, served warm or at room temperature.

Ingredients

  • 6 oz glass noodles
  • 8 oz shrimp, peeled and deveined
  • 1 small cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 small shallot, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, torn
  • 2 tbsp gluten-free fish sauce
  • 3 tbsp fresh lime juice
  • 2 tsp granulated sugar
  • 1 small red chili pepper, finely sliced

Directions

  1. 1Soak or cook the glass noodles according to package directions until just tender, then drain and cut into manageable lengths.
  2. 2Bring a small saucepan of water to a gentle simmer and cook shrimp 2–3 minutes until opaque; drain.
  3. 3Whisk fish sauce, lime juice, sugar, and chile in a large bowl until the sugar dissolves.
  4. 4Add warm noodles and shrimp to the dressing and toss so they absorb the seasoning.
  5. 5Fold in cucumber, tomatoes, shallot, cilantro, and mint just before serving.

💡 Dress the noodles while they are still slightly warm; they absorb the lime and fish-sauce seasoning more evenly than fully chilled noodles.
