Ingredients
- •6 oz glass noodles
- •8 oz shrimp, peeled and deveined
- •1 small cucumber, thinly sliced
- •1 cup cherry tomatoes, halved
- •1 small shallot, thinly sliced
- •1/4 cup fresh cilantro, chopped
- •1/4 cup fresh mint, torn
- •2 tbsp gluten-free fish sauce
- •3 tbsp fresh lime juice
- •2 tsp granulated sugar
- •1 small red chili pepper, finely sliced
Directions
- 1Soak or cook the glass noodles according to package directions until just tender, then drain and cut into manageable lengths.
- 2Bring a small saucepan of water to a gentle simmer and cook shrimp 2–3 minutes until opaque; drain.
- 3Whisk fish sauce, lime juice, sugar, and chile in a large bowl until the sugar dissolves.
- 4Add warm noodles and shrimp to the dressing and toss so they absorb the seasoning.
- 5Fold in cucumber, tomatoes, shallot, cilantro, and mint just before serving.
💡 Dress the noodles while they are still slightly warm; they absorb the lime and fish-sauce seasoning more evenly than fully chilled noodles.
