Youtiao
Crispy golden fried dough sticks perfect for dipping in congee or soy milk for a traditional Chinese breakfast.

Ingredients
- •2 cups all-purpose flour
- •3/4 cup water
- •1/2 teaspoon salt
- •1/2 teaspoon baking powder
- •1/4 teaspoon baking soda
- •1 tablespoon vegetable oil plus more for frying
- •2 quarts vegetable oil for deep frying
Directions
- 1Mix flour, salt, baking powder, and baking soda in a bowl.
- 2Add water and 1 tablespoon oil, stirring until a soft dough forms. Knead for 5 minutes until smooth.
- 3Cover dough and let rest at room temperature for 1-2 hours.
- 4Roll dough into a 1/4-inch thick rectangle on an oiled surface. Cut into strips about 1 inch wide and 4 inches long.
- 5Heat oil to 350°F (175°C) in a deep pot or wok.
- 6Stretch each dough strip slightly and fry 2-3 at a time until golden brown and puffy, about 2 minutes per side.
- 7Drain on paper towels and serve hot with congee, soy milk, or sweet sauce.
