Za'atar Roasted Chicken

Ingredients
- •1 whole chicken (3-4 lbs), cut into pieces
- •3 tablespoons za'atar spice blend
- •1/4 cup olive oil
- •3 tablespoons fresh lemon juice
- •4 cloves garlic, minced
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •1 teaspoon paprika
- •2 medium onions, sliced
- •1 cup chicken broth
Directions
- 1Preheat oven to 425°F. In a small bowl, whisk together za'atar, olive oil, lemon juice, minced garlic, salt, pepper, and paprika.
- 2Arrange chicken pieces in a large roasting pan, skin-side up. Distribute sliced onions around the chicken.
- 3Rub the za'atar mixture generously over all chicken pieces, ensuring even coating.
- 4Pour chicken broth into the bottom of the pan, avoiding pouring over the seasoned chicken.
- 5Roast for 35-40 minutes, until the chicken is golden brown and internal temperature reaches 165°F.
- 6Remove from oven and let rest for 5 minutes before serving with pan juices spooned over top.
