Ingredients

  • 1 whole chicken (3-4 lbs), cut into pieces
  • 3 tablespoons za'atar spice blend
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 medium onions, sliced
  • 1 cup chicken broth

Directions

  1. 1Preheat oven to 425°F. In a small bowl, whisk together za'atar, olive oil, lemon juice, minced garlic, salt, pepper, and paprika.
  2. 2Arrange chicken pieces in a large roasting pan, skin-side up. Distribute sliced onions around the chicken.
  3. 3Rub the za'atar mixture generously over all chicken pieces, ensuring even coating.
  4. 4Pour chicken broth into the bottom of the pan, avoiding pouring over the seasoned chicken.
  5. 5Roast for 35-40 minutes, until the chicken is golden brown and internal temperature reaches 165°F.
  6. 6Remove from oven and let rest for 5 minutes before serving with pan juices spooned over top.
