Zarzuela de Mariscos
A luxurious Spanish seafood stew bursting with mussels, shrimp, and white fish in a saffron-infused tomato broth.

Ingredients
- •3 tablespoons olive oil
- •1 medium onion, diced
- •4 cloves garlic, minced
- •1 can (14 oz) diced tomatoes
- •1 cup fish or seafood stock
- •1/4 teaspoon saffron threads
- •1/2 cup white wine
- •1 pound firm white fish fillets, cubed
- •1 pound mussels, cleaned
- •1/2 pound large shrimp, peeled and deveined
- •1/2 teaspoon paprika
- •to taste salt and pepper
- •2 tablespoons fresh parsley, chopped
Directions
- 1Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened, about 3 minutes.
- 2Add diced tomatoes, paprika, and saffron threads. Stir well and simmer for 5 minutes.
- 3Pour in white wine and fish stock. Bring to a simmer and cook for 5 minutes.
- 4Add the white fish cubes and cook for 5 minutes until starting to become opaque.
- 5Add mussels and shrimp, then cover and simmer for 8-10 minutes until mussels open and shrimp are pink.
- 6Discard any unopened mussels. Season with salt and pepper to taste.
- 7Ladle into bowls, garnish with fresh parsley, and serve hot with crusty bread.
