Zarzuela de Mariscos

A luxurious Spanish seafood stew bursting with mussels, shrimp, and white fish in a saffron-infused tomato broth.

Ingredients

  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup fish or seafood stock
  • 1/4 teaspoon saffron threads
  • 1/2 cup white wine
  • 1 pound firm white fish fillets, cubed
  • 1 pound mussels, cleaned
  • 1/2 pound large shrimp, peeled and deveined
  • 1/2 teaspoon paprika
  • to taste salt and pepper
  • 2 tablespoons fresh parsley, chopped

Directions

  1. 1Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened, about 3 minutes.
  2. 2Add diced tomatoes, paprika, and saffron threads. Stir well and simmer for 5 minutes.
  3. 3Pour in white wine and fish stock. Bring to a simmer and cook for 5 minutes.
  4. 4Add the white fish cubes and cook for 5 minutes until starting to become opaque.
  5. 5Add mussels and shrimp, then cover and simmer for 8-10 minutes until mussels open and shrimp are pink.
  6. 6Discard any unopened mussels. Season with salt and pepper to taste.
  7. 7Ladle into bowls, garnish with fresh parsley, and serve hot with crusty bread.
