Zheng Shui Dan (Chinese Steamed Eggs)
Egg beaten with warm water and steamed gently into a savoury custard as smooth as silk.

Ingredients
- •4 eggs
- •300 ml warm water
- •1 tbsp soy sauce
- •1 tsp sesame oil
- •1 green onion, sliced
Directions
- 1Beat the eggs gently, trying not to whip air into them.
- 2Add the warm water in a thin stream, stirring, and season with a pinch of salt.
- 3Pour the mixture through a fine sieve into a shallow dish to remove every thread and bubble.
- 4Cover the dish tightly with foil so no condensation can drip onto the surface.
- 5Steam over low heat for twelve minutes until just set and barely wobbling in the centre.
- 6Drizzle with the soy sauce and sesame oil and scatter the green onion over.
💡 Sieve it and cover it. Those two steps are the whole difference between a silk custard and a pitted, watery one.
